Gourmet Recipes Using Coronavirus Pantry Staples
With so many people at home and sports cancelled, there’s lots of time for getting creative in the kitchen. If you panic shopped for food before the coronavirus, you’re all stocked up on staples, but what can you make with those nonperishables? Chefs suggest these creative dishes (get the full recipes here.)
·Creamy chickpea salad - You can do a lot with a can of chickpeas. Smash them up to create a tangy vegetarian take on tuna salad by adding some Greek yogurt or mayo, salt, pepper, garlic powder, apple cider vinegar, lemon juice and chopped red onion.
·Scrappy bread pudding - Not sure what to do with the eight loaves of bread you panic bought? If you have milk, eggs, apples, vanilla extract, cinnamon, nutmeg, and sugar, you can turn them into bread pudding for a tasty treat that can double as a breakfast the next morning.
·Pandemic pasta fagioli - Cook up “the ultimate Italian soul food” with beans, pasta, frozen greens, olive oil, bacon, chicken stock, garlic and other spices.
·Paella - Have too much rice taking up space in your pantry? Try your hand at making paella. You’ll need stock, olive oil, a pound of whatever meat is in the freezer, frozen peas and frozen green beans, along with that rice, chopped garlic, tomato sauce and spices.
·Ultra-filling frittata - For this “good anytime” meal, it takes butter, bread crumbs, milk, rice, eggs, Parmesan cheese, and scallions, if you have them.
·Instant noodle hack - Did you stock up on ramen noodles? Then you can make this spin on the dorm room staple that’s easy and packed with protein. Along with the noodles, all you need is bacon, eggs, cheddar cheese and hot sauce.
